Lemon Chocolate Tea Cakes
Recipe Submitted by the Forest Springs B&B @ Historic Heiney House
2 Cups Flour
1Teaspoon Baking Powder
¼ pound Chilled Butter
¼ Cup Raw Sugar
(Blend to resemble cornmeal)
Mix in Zest from 1 lemon, ¼ Cup Mini Bitter Sweet Chocolate Chips
Form a well in center and add 1 Egg, a large splash of Heavy Cream (A little more cream may be needed) and a teaspoon of lemon juice
Mix and form into an inch depth round
Cut into 8 triangles, brush with egg white and place on large insulated cookie sheet
Bake in preheated 370 degree (Convection Bake) 400 normal oven
Bake 20 to 30 minutes
Glaze with lemon icing and dust with powdered sugar
