Mixed Berry Clafoutis

Saute Berries with T Agave Nectar
When fruit is slightly softened, strain fruit from remaining liquid.
Return liquid to pan and reduce to a syrup consistency
Place fruit in individual custard or casserole dishes and drizzle a small amount of syrup on each serving.

Batter ( 3 individual servings 4-6 ounce)

Mix the following ingredients:
¾ Cup Flour/ ½ Agave Nectar/ ¼ t Baking Powder/(Cinnamon if using winter fruit)/2 Eggs/2Egg yolks/Vanilla/ 1 ½ Cups Dairy ( Any combination of Milk, Cream, or ½ n ½ )
Pour batter over fruit (fill to within an 1/8 inch of the top)
In a Convection/Bake oven, bake at 345 for 20 to 30 minutes (Should rise above pan line and be slightly firm to the touch)
In a regular oven, bake at 375 for 15 minutes and then reduce to 325 for an additional 10 to 15 minutes.
Remove to a damp cloth lined plate
Dust with powdered sugar and serve immediately

A dollop of fresh whipped cream makes a perfect garnish
