Dutch Baby Pancakes
Recipe Submitted by the Apple Inn Bed & Breakfast
1 tablespoon butter
3/4 cup milk
pinch of salt
1/8 teaspoon nutmeg, cinnamon or etc
1 teaspoon vanilla
3/4 cup flour
You will need a blender for this recipe.
Preheat the oven at 375.
Place a cast iron skillet or pie plate in the oven to heat.
Combine the milk, eggs, and salt in the blender and blend until smooth.
Add the flour and spices and blend again until smooth.
Carefully remove the hot pan from the oven and melt the butter in the hot pan.
Add the batter and return the pan to the oven for about 30 minutes to bake.
The pancake will puff and brown.
When removed from the oven the center of the pancake will fall.
Serve immediately with a sprinkle of powder sugar.
Serve with fruit, syrup, fresh lemon juice and etc.
You may also add some sliced fresh apples to the batter when placing in the oven and add a few minutes to the baking time.
Makes a generous amount for 2.
I use #3 cast iron pans for individual servings.
