Rhubarb Muffins
Recipe Submitted by the Lobenhaus Bed Breakfast & Vineyard
MIX:
3/4 cup brown sugar
1 egg
1/3 cup oil
1 tsp. vanilla
1/2 cup half & half
ADD:
1 1/2 cup flour
1/2 tsp. baking soda
1/2 tsp. salt
ADD:
1 cup finely chopped rhubarb
1/2 cup chopped walnuts
FILL:
12 greased muffin cups or paper lined (3/4 full)
TOPPING:
1/4 cup brown sugar
1/2 tsp. cinnamon
1 T. Flour
1/4 cup chopped walnuts
BAKE:
350 - 20-25 minutes
YIELD:
One dozen – freeze well
