Day 10 of the Oregon Bed and Breakfast Guild’s 12 Days of Holiday Cookies
To celebrate 12 Days of Holiday Cookies. Erin, innkeeper of A’Tuscan Estate Bed and Breakfast shares her recipe, and tempting photo for her Cranberry, Hazelnut and White Chocolate Cookies
Ingredients
- 1 package of Sugar Cookie Mix
- 8 Tbsp butter, room temperature
- 1 large egg
- 1 cup dried cranberries
- 1 cup coarsely ground hazelnuts
- 1 oz white chocolate, finely grated
- 1 oz white chocolate for melting for drizzle
Instructions
- Preheat oven to 350 degrees and line two baking sheets with parchment paper or Silpats.
- Stir cookie mix, butter, egg, 1 oz finely grated white chocolate, hazelnuts and cranberries until dough forms.
- Scoop 2 Tbsp cookie dough onto prepared cookie sheets.
- Bake for 10-12 minutes, until cookies are just turning golden around the edges, but are still soft.
- Let cookies cool on the pan for a couple minutes before moving to wire cooling rack.
- Melt remaining 1 oz of white chocolate and drizzle over cooled cookies.
