Strawberry Rhubarb

The innkeeper at Yamhill Vineyards Bed and Breakfast shared her Lemon Blueberry Biscuits awhile back.Today she mixes it up a bit using Oregon strawberries and rhubarb that are in season.

We innkeepers love to bake. Most every breakfast includes a delectable treat made with local and fresh fruits and vegetables. Whether that dish is an main course or a side, something sweet is always included, using what’s seasonally available.
Enjoy

Strawberry Rhubarb Biscuit or Scone
Yield: 12-18

Ingredients:
Preheat oven to 400 degrees

2 Cups all-purpose flour
½ Cup sugar
2 teaspoons baking soda
¼ teaspoon salt
1 Cup vanilla yogurt
1 Large egg at room temperature
¼ Cup melted butter
½ Cup chopped strawberries
¾ Cup diced rhubarb

In a large bowl whisk the first 5 ingredients. Add egg, yogurt and melted butter. Stir until moistened. Fold in strawberries and rhubarb.
If you’re making biscuits you’ll drop about 1/3 cupful onto a greased baking sheet. For scones little bigger scoop. She also likes to line the baking sheet with parchment paper. Bake 15-18 minutes or until golden brown. Shorter time for strawberry rhubarb biscuits, a little longer for the bigger scone.

Glaze:
½ Cup confectioners’ sugar
¼ teaspoon vanilla
Enough milk or water to make the glaze drip off the spoon.
Mix glaze ingredients until smooth. Drizzle over warm biscuit/scone.

Hood River Valley

Kiyokawa Family Orchards in the Hood River Valley

Hanner’s Jumbo.  Zestar.  Hokutoi.  Sansa.  Ever heard of these apples?  How about Butter, Mederis, or Cascade pears?  I hadn’t, until I discovered an amazing family farm just a mile and a half from our inn, the Old Parkdale InnKiyokawa Family Orchards, located in the Upper Hood River Valley, has been growing the finest produce since 1911 and along with the “old world” varieties you’ll find also the more common Bartlett Pears, Gravenstein and Fuji apples. The fertile soils found at the base of Mt Hood and glacier fed water sources create a unique growing environment allowing for the farm to grow over 80 distinctive varieties of apples, pears and Asian pears.

The farm offers both the largest u-pick orchards in the valley along with ready picked fruit, award-winning pies, turnovers, local honey, jams, and fresh cider.

The Hood River Valley is in the middle of its fall harvest and we invite you come up and enjoy our warm days, cool crisp nights, awesome fall foliage and of course Kiyokawa Family Orchards.  Plan to spend at least a day or two, maybe more, as there is just so much to explore.  Be sure to reserve your room early at a Mt Hood Bed and Breakfast of the Oregon Bed and Breakfast Guild.  We suggest coming during the week as the weekends with all its harvest activities, festivals and special events, can get a bit crowded as more and more folks “discover” the Hood River Valley.  The fruit tastes even better during the week!!

Wheeler County Central Oregon Events and Wilson Ranches Retreat

Wheeler County Events and Wilson Ranches Retreat for true Pioneer hospitality!  At the ranch enjoy scenic horseback rides, cattle drives, hiking and 4X4 sunset ranch tours on a 9,000 acre working cattle ranch. Close to the John Day Fossil Beds National Monument, bass fishing, river rafting, and golfing.

Wheeler County Bluegrass Festival (July 6,7 & 8, 2018)
The Wheeler County Bluegrass Festival has grown steadily over its history and is noted for its pleasant rural atmosphere. The Festival takes place in the old pioneer town of Fossil in front of the beautiful brick courthouse, now over 100 years old.

Fossil Cruz-In (July 7, 2018)
Bring your lawn chairs, relax and enjoy the car show and live music. Entries begin at 9:30am and close at 11:30am. Awards at approximately 3:30pm. $15 pre-registration; $20 day of show.

Wheeler County Fair and Rodeo (August 8-12, 2018)
A traditional small town, county fair complete with 4-H livestock exhibits, a parade, NPRA rodeo action, live music, and a whole lot of family friendly fun.
