Roll-Out Sugar Cookies from Chehalem Ridge B&B. Perched on eight acres atop Chehalem Mountain overlooking the Willamette Valley and Coast Range, the B&B offers a peaceful retreat between adventures in the valley below.
Roll-Out Sugar Cookies
Servings: 24
8 ounces butter
1 cup sugar
1 each egg
1 teaspoon vanilla
2 teaspoons baking powder
3 cups all-purpose flour
Cream together the butter and sugar. Add eggs one at a time, beating to combine. Add
vanilla. In another bowl, mix together baking powder and flour. Add flour mixture to
butter mixture and beat until combined. No need to refrigerate.
Roll out, cut with cutters and bake on parchment paper until lightly browned, 7-9 minutes
at 350°.
Royal Icing
4 tablespoons meringue
powder
1/2 teaspoon cream of tartar
5 1/2 tablespoons water
1 pound powdered sugar
Place in grease free bowl and beat until stiff peaks form. This is really stiff. Add more water
to get the desired consistency.
