Be sure to set some aside for this smooth Wine Sorbet shared by Yamhill Vineyards Bed and Breakfast. Blackberries are also lovely in this light dessert.

Basic Wine Sorbet

Ingredients:
¾ cup water
⅔ cup sugar
1 ¼ -1 ½ cups White Riesling, Pinot Gris or Chardonnay wine

Use berries of choice or try nectarines, peaches and other fruit.
The innkeeper prefers using 1 ¼ cups of wine

Instructions:

Combine water and sugar in a small saucepan. Heat slowly over low heat until sugar is dissolved. Add wine, stir and remove from heat. Cool. Freeze according to ice cream maker instructions. I put the mixture in a 4 cup measure cup in the freezer and stir frequently until frozen. At this point you can put small amounts in a blender and blend for a smoother sorbet. Put sorbet into an airtight container to keep it for awhile. Enjoy.
