Gingerbread Cookie Sandwich with Maple Vanilla Buttercream

Day 5 of the Oregon Bed and Breakfast Guild’s 12 Days of Holiday Cookies

To celebrate 12 Days of Holiday Cookies. Erin, innkeeper of A’Tuscan Estate Bed and Breakfast shares her recipe, and tempting photo for her Gingerbread Cookie Sandwich with Maple Vanilla Buttercream


2 C Almond Flour
2 T Oat Flour
2 t Baking Powder
1/4 t Kosher Salt
1 t Ginger (powder, not fresh!)
1 t Cinnamon
1/2 t Nutmeg
1/2 C Granulated Sugar
1/4 C Light Brown Sugar

1/4 C Molasses
2 t Vanilla Extract
1 Large Egg
3 T Coconut Oil (liquid)

1 C (1 whole stick) Butter, Room Temp
3.5 C Powdered Sugar
1/2 T Vanilla Extract
1 T Maple Syrup
3 T Heavy Cream

1/2 C Powdered Sugar – used to roll the dough before baking. use excess to sprinkle on top when cookies are complete.

-Preheat oven to 350
-Combine dry ingredients using a whisk/fork
-Combine wet ingredients using a whisk/fork
-Combine wet with dry ingredients, mix with spoon
-Pour 1/2 C of the powdered sugar into a shallow dish
-Using a cookie scooper, scoop out about a donut-hole size of dough, toss in powdered sugar to coat, then roll into a ball using hands (The sugar will almost act as a flour, so it will be easier to roll)
-Place dough balls onto parchment lined baking sheet (Leave room between each ball to spread – makes 18 large balls or 36 small. bake on 2 baking sheets not @ same time)
-Bake for 12 minutes
-Let the cookies sit for at least 15-20 minutes. will look soft at first, but will set after letting them rest

FILLING (makes double the amount)
-Bring butter to room temp
-Once soft, beat on low & increase to medium speed w/ electric hand mixer for 1 min or until it has cream like consistency w/ peaks
-Start to incorporate powdered sugar 1 C at a time. Start at low speed & increase to medium once sugar starts to incorporate. Do this for ~ 2 min/until it is creamed together
-Add in vanilla, maple syrup, & heavy cream. Start beating on low & increase to medium for about 2-3 min until desired consistency
-Scoop filling into plastic ziptop bag
-Pipe desired amount on one side of cookie, starting 1/4 inch away from edge and swirling towards the center. Gently press down – the cream will spread to edges!
-You can save the rest of filling for another batch
-Sift excess sugar on cookies
