Chocolate Peanut Butter Pretzel Bon Bons

A’Tuscan Estate Bed and Breakfast offers beautiful accommodations and wonderful cuisine in the heart of Oregon’s Wine Country. Day 1 of the Oregon Bed and Breakfast Guild’s 12 Days of Holiday Cookies

To celebrate 12 Days of Holiday Cookies. Erin, innkeeper of A’Tuscan Estate Bed and Breakfast, shares her recipe and tempting photo for her Chocolate Peanut Butter Pretzel Bon Bons

1 1/2 C  pretzels
1/2 C creamy peanut butter (I find that natural peanut butter works better as it has more natural oils)
1 Tbsp butter, softened
2 Tbsp brown sugar (I substitute Brown Splenda and use half as noted on the Splenda package)
1//8 tsp salt
3 Tbsp powdered sugar
1 C semi-sweet chocolate chips (I usually use Ghiradelli Bittersweet or Hershey’s Special Dark. You can use any kind of chocolate you like.)
Sea Salt

Crush pretzels into small bits.  (I use a food processor with small Pretzels. Could use a baggie with a rolling pin)

In large bowl, combine peanut butter, butter, brown sugar and salt until smooth.

Add pretzel bits and mix thoroughly.

Add powdered sugar and mix thoroughly.  (I usually add a Tbsp at a time.  This is to help the ingredients adhese and form a ball more easily.)

-Chill for about 30 minutes.

-Line a cookie sheet with foil or parchment paper.

-Scoop balls.  I use a small cookie scoop.

-Chill again for 15-30 minutes.

-Form into round balls. If sticking to your fingers too much, either add a bit more powdered sugar or run your hands under cold water.

-Chill again for 15 minutes.

-Melt chocolate in microwave for one minute.  Stir until completely melted. If need to heat more, use 10 sec increments. If chocolate seems too think, add 1 Tbsp vegetable oil and stir to thin.

-Dip balls in chocolate using a fork or dipping tool.  Place on tray and sprinkle with a few grains of sea salt.

-Chill to harden
